A show of hands please, who loves sundried tomatoes?
I’ve only recently become a fan of tomatoes (vine, salad, plum etc), but I have always enjoyed the sun dried variety. So imagine my delight when I came across instructions on how to make them from home.
Makes 1 small tub of sundried tomatoes
250g of cherry tomatoes
6 cloves of garlic
a pinch of himalayan salt
a sprinkling of oregano
oil for baking
Prep: 5mins Cook: Several Hours (Depends on your oven) Ready In: Hours (But it will be worth it!)
- Pre heat the oven
- Lightly coat a baking dish with oil
- Halve the tomatoes, placing them face up into the dish
- Crush / chop the garlics and sprinkle over the tomatoes
- Add the salt and oregano
- Optional: Spray the tomatoes with oil
- Place into the oven on a low heat
The cook time is dependant on your oven type, however be mindful that it will take several hours. Cook on a low heat to dehydrate the tomatoes and avoid burning the herbs, remove from the oven when you are happy with the tomatoes, cool and then pot, covering in olive oil.
These naturally sweet tomatoes can be enjoyed in so many ways. I spent 54p on the tub so as the cheapest sun dried I’ve ever had I’ll never buy them again!
