Oh my gosh – I just made the tastiest flapjacks ever!
Flapjacks are a healthy snack which I make about once a week and store in airtight containers for the few
days moments in which they last. I say moments because a batch rarely lasts for more than a day. I usually stick with the same ingredients (bananas and raisins) but today I deviated.
The measurements are all rough estimations as I literally just throw everything in!
- Golden Syrup
- Brown Sugar
- Mashed banana
- Optional – mashed pear
- Ground Ginger
- 2 tsps of homemade minced meat
Prep Time: 5 mins Cook Time: 15 mins Ready in: 20 mins
Melt the butter on a low heat then stir in the golden syrup. The mixture will start to bubble up and now is a good time to add the brown sugar. I actually forgot to put the sugar in today but honestly having tasted the flapjacks, the sugar isn’t missed.
Stir in the oats and then add the remainder of the ingredients , ensuring that all of the oats are coated. Transfer to a greased dish and flatten, baking on a low heat for around 15 minutes. Once out of the oven, immediately cut into squares and allow to cool.
These are great immediately out of the oven on their own or with ice cream/cream but I also like cooling them and adding them to snack boxes. They are also a nice homemade treat to share with visitors. For a festive feel (and taste) I tried adding my homemade mince meat and – just wow!
I’ll be repeating this recipe closer to Christmas, at which point I’ll coat with melted white chocolate and strips of candied orange peel……
